Roasted Rack of Lamb by Bake It With Love

Ingredients:

  • 2½ lbs lamb (2 racks of lamb, 8 bones each)
  • 2 Tbsp olive oil (extra virgin)
  • 1 Tbsp garlic (minced)
  • 2 Tbsp fresh rosemary (minced)

  • 1 Tbsp fresh oregano (minced, or thyme)
  • 1 Tbsp fresh parsley (minced, plus more for garnish)
  • ½ tsp each, salt and pepper (to taste)

Directions:

  1. Coat a sheet pan with olive oil, then mix together in a small bowl 2 tablespoons of olive oil, 1 tablespoon of minced garlic, 2 tablespoons of fresh rosemary, 1 tablespoon of fresh oregano (or thyme), 1 tablespoon of fresh parsley, and ½ teaspoon each of salt and pepper, stirring to combine.
  2. Place the 2.5-pound lamb onto the foil-lined pan and rub the seasoning mixture all over both racks, making sure to coat all sides. Then, let the lamb rest at room temperature for 40-45 minutes.
  3. Before putting your lamb in the oven, preheat it to 450°F (230°C) after it has warmed to room temperature.

  1. Roast the lamb in the preheated oven for 30 minutes or until it reaches an internal temperature of 145°F (63°C).
  2. After cooking, remove the lamb racks from the oven and cover them with foil. Let them rest for 10 minutes.
  3. Serve the lamb sliced between the bones, garnished with parsley, and accompanied by a mint sauce.
