Nostalgic Blueberry Jam Icebox Cake for Mother's Day: Recipe

Icebox cake is a perfect dessert for Mother's Day, with its sweet and creamy texture, and this recipe adds a unique twist.
Mariana Leung, creative director at Wicked Finch Farm, creates her own bourbon blueberry jam using blueberries grown on her Hudson Valley property in New York state.
She stated that during summer, she enjoys entertaining but cannot stand the idea of using the oven.
"An icebox cake is a simple and fast option for an immediate celebration," she stated.
Her company's boozy jams are her go-to ingredient for cocktails, desserts, salad dressings, or straight out of the jar, as she said.

Bourbon Blueberry Icebox Cake by Mariana Leung of Wicked Finch Farm

Ingredients
- A 6 oz. jar of Wicked Finch Farm Bourbon Blueberry Jam (or any preferred berry jam) is available.
- 8 oz. cream cheese, softened
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- Squeeze of lemon juice, ½ teaspoon of lemon zest (optional)
- Half box of graham crackers (14.4 oz box)
Directions
Beat the heavy cream into stiff peaks on high speed using a mixer with a whisk attachment.
2. Gradually add the cream cheese to the mixture on medium speed.
If using lemon juice, zest, vanilla extract, and sugar, add them to the mixture.
To make a graham cracker cake, line a 9" x 5" loaf pan with parchment paper, then layer graham crackers on the bottom, breaking them to fit. Add a thin layer of cream cheese mixture, followed by jam. Repeat for 2-4 layers to achieve the desired cake height.
Before serving, let the cake sit in the refrigerator for 2 hours. Once chilled, remove it from the loaf pan and put it on a plate. Then, top it with more cream cheese mixture.
Top with jam for a decorative swirl or marbled effect.
Top with berries, lemon zest or edible flowers if available. Enjoy.
