Omelet Roll by Bake It With Love
Servings: 12
Prep Time: 15 minutes
Cook Time: 35 minutes
Ingredients
A half-block of softened 8-ounce cream cheese (at room temperature) is equivalent to 4 oz.
¾ cup milk (whole milk or 2% milk)
2 Tbsp Dijon mustard
12 large eggs (at room temperature)
¼ tsp salt
One cup of shredded cheddar cheese, divided into three equal portions of 1/4 cup each.
2 cups ham (fully cooked, finely diced)
1 tbsp chives (optional, chopped)
Directions
To prepare your baking dish, preheat your oven to 375°F (190°C) and line it with parchment paper. Make sure to leave enough paper to serve as handles and grease the paper and dish sides.
Combine cream cheese, milk, Dijon mustard, eggs, and salt in a bowl and whisk until smooth and light.
Remove the egg mixture from the baking dish and bake at 375°F (190°C) for 30-35 minutes. The eggs should be puffy and set. Lift the eggs from the pan onto a working surface.
Add 1 cup of shredded cheddar cheese on top of the baked eggs, followed by diced ham and another 1 cup of shredded cheese.
Roll the omelet and cheese starting from one end and work towards the opposite end, peeling back the parchment paper as you go. Place the rolled omelet onto the center of the peeled parchment paper and top with the remaining ¼ cup portion of shredded cheese.
After melting the cheese in the oven for 4-5 minutes, sprinkle with chopped fresh chives and serve immediately.
